Fungal alpha-Amylase Liquid is a high purified liquid fungal alpha amylase enzyme made from strain of Aspergillus oryzae through cultivation, submerged liquid fermentation and extraction.  

Fungal alpha-Amylase Liquid is of endoglucanase amylase, which can rapidly hydrolyze the α*1,4 glycosidic bonds of starch chain and generate high-level maltose, maltotriose, glucose and other oligosaccharide, widely used in production of fuel ethanol, distillery, beer, high maltose syrup and many other food industries.

DEFINITION OF UNIT
1 unit of Fungal alpha-Amylase Liquid equals to the amount of enzyme which hydrolyzes soluble starch to get *0mg glucose at *0°C and pH5.0 in *0 minutes.  

FUNCTION CONDITION
Working at pH 4.**6.6, optimum 4.**5.5; working temperature ****5°C,favorable ****5°C.  

FUNCTION PRINCIPLE
Fungal alpha-Amylase Liquid breaks down long-chain carbohydrates, ultimately yielding maltotriose and maltose from amylose, or maltose, glucose and "limit dextrin" from amylopectin.  

EXPIRATION
*5°C, 6 months, activity remains *0%; 9 months, activity remains ≥*5%.
