Amaranth, which contains the smaller edible grains in the world, was cultivated and domesticated in the Andes thousands of years ago. It played a major role in the nutrition of the Inca Civilization. Amaranth was even found beside Andean tombs of over ***0 years old. In present, after important discoveries about their nutritional value, Amaranth retook its popularity and its exports increases every year to many parts of the world. Importance of Amaranth: The grains of Amaranth have a very thin and soft fiber and have a more balanced composition than conventional cereals, which makes them ideal for daily consumption. Amaranth grains contain between *3% to *8% protein. They also contain calcium, phosphorus, iron, potassium, zinc, vitamin E, vitamin B complex and the following essential amino acids: arginine, lysine, isoleucine, leucine, threonine, valine, phenylalanine, histidine, methionine and tryptophan.
