Toma Piemontese is a traditional cheese that embodies the richness
of the Piedmontese dairy tradition, produced with whole raw cow's
milk. With its round shape with flat faces and slightly convex
side, it has a thin and characteristic rind, grey or pink in
colour. The ivory white paste is soft, elastic and moderately
consistent, with widespread holes that enrich the structure of the
cheese. The flavour is a harmony between the natural sweetness of
the milk and a delicately savoury aroma, offering a pleasant and
versatile aromatic profile, ideal both to be enjoyed alone and as
an ingredient in traditional recipes.
