Harvests a small organic grove of old olive trees producing extra virgin olive oil (EVOO) of high quality, located in the mountainous Chalkidikis region in northern Greece. The olive groves are unusual: located in protected Natura Areas, they contain wild and half-wild olive trees that are at least **0 years old. Using an updated version of the traditional production process, Zotou and her colleagues carefully and respectfully avoid harming nature, thus producing EVOO with no residues of pesticides.
