 TOMAX is not a preservative, it functions as a preservative by inhibiting the growth of bacteria , tomax is only available in liquid form and is added at around 1% as consumed , the flavour , the appearance and the shelf life are enhanced the cost of addition is usually recouped as tomax aids moisture retention in most products especially functional if used in pumping pickles / tumbeling / spraying/ dipping dependent on the level of bacterial load less than 1% can be used.
