Lipases are enzymes that break down lipid molecules and fats in food to glucerol and simple fatty acids so they can be absorbed by the the intestines to fuel the body. Animals that lack this important enzyme may not be able to get the nutrition they need from food they eat. Some digestive problems are caused by the lack of lipase in the gastrointestinal system. Lipases are also involved in diverse biological processes from normal metabolism of dietary triglycerides to cell signaling and inflammation. Lipases play a very important role in the way living things function. Too much fat in animal diet may cause health problems. However, a substantial amount is absolutely needed to ensure viable cells and good health. It is more important then, that the fats animals eat is properly broken down before they are absorbed or health consequences may occur. Lipase is extensively used in many industries. The hydrolysis of tallow or hard fat made from the body parts of animals, like horses and cattle, which is necessary for soap making and stain-digester detergent production use lipase for these purposes.  Lipase is used in the synthesis of modified or structured lipids for their nutritional benefits in baby food. Lipase speeds up the cheese-ripening process and enhance flavors in some cheeses like cheddar. Lipases are used in the manufacturing of cosmetics and skin-care products.
