DESCRIPTION: Clove, small, reddish-brown flower bud of the tropical evergreen of the family mrytacaea. COMPOSITION:

Cloves contain *4 to *0 percent essential oil.

The principal component is the aromatic oil eugenol (*0 to *5%). Cloves are strongly pungent. Three essential oil are available from this spice namely clove bud oil, clove stem oil and clove leaf oil. Each has different chemical composition and flavor.
