Black Dory:

Black Dory is a high quality fillet with slightly firmer texture than smooth dory and a more distinct flavour.

Black Dory is sub-antarctic specy and is bottom trawled at depths of up to 1,**0 metres. Harvesting is year-round, while premium quality is ensured by short trawls and rapid freezing.

Black Dory fillets is processed from both iced whole fish and frozen-at-sea headed and gutted product. Filleting is generally performed either by hand or sophisticated mechanical equipment to achieve maximum recovery and maintain quality standards.

Dory is useful in portion-controlled menu situations, as a whole fillet may be used. It is excellent for restaurants, function caterers and retail fish bars.
