DESCRIPTION OF PRODUCT PROCESSING:

The product is obtained from the waters of the Galician Rias, which are constantly under rigorous health and quality controls to ensure microbiological quality, and content of toxic phytoplankton (producers of A.S.P., D.S.P. and P.S.P. toxins).

Once we receive the mussels at our facility, they are washed, separated from each other, have their byssus removed, cooked, taken out of their shell, graded, frozen and glazed. After this they are packed to client specifications and cold stored, maintaining the cold storage chain.
