Introduction

Termite mushrooms, known scientifically as Termitomyces, are among the most sought-after wild edible mushrooms in Asia and Africa. In Vietnam, they are locally called nấm mối, which literally translates to "termite mushrooms" due to their natural relationship with termite colonies. These mushrooms grow symbiotically with subterranean termites, emerging seasonally after the first rains.

Valued for their natural origin, rich umami flavor, and clean nutritional profile, termite mushrooms are considered a plant-based delicacy that fits perfectly into modern clean-label food trends.

Termitomyces is a unique genus of mushrooms that grows in close association with certain species of termites. The termites cultivate a special underground fungus garden made from chewed-up plant material. Over time, mushrooms sprout from this organic base, usually around termite mounds or near decomposing wood.

This natural cultivation process is what makes termite mushrooms so unique—they are not artificially farmed, ensuring a wild, uncontaminated origin that appeals to health-conscious consumers.

These mushrooms typically appear during the rainy season (from May to October in Southeast Asia), and their growth is unpredictable, making them a rare and seasonal treat.
