In nature, starch is a carbohydrate formed naturally in large quantities. It is found in nuts, seeds and fruits of plants. Starch provides energy sources to plants during its sleep and germination. It is also the most important energy source of animals and human. Starch plays a vital role in our life. The statistical data shows that there are more than four thousand starch applications today.
The natural starches that are widely used and provide commercial values mainly consist of tapioca starch, potato starch, corn starch and wheat starch. From the comparison of starches, we know that the composition and characteristics of tapioca starch are similar to potato starch and better than corn starch and wheat starch. In addition, the price of potato starch is much higher tapioca starch. With the advantages of features and price, there is significant growth in demand for tapioca starch over the world. Concurrently, the general orientation for health has made the attention and the increasing demands for foods without any genetically modified organism (GMO).
Tapioca starch is widely used in food and non-food applications. In food industry, the main products derived from cassava are glucose, dextrose, fructose and other sweeteners.
Tapioca starch can also be processed into a kind of food seasoning products in crystal form called sodium glutamate. In addition, many other food additive products are also produced with the use of tapioca starch such as noodles, pearl sago, cream, sauces, gravies, binder used in food industry, soup thickeners, etc.
