If youve looked into eating raw finned creatures before, youve probably seen or heard the term sushi grade. It sure sounds like the fish youre looking for, but the term is essentially meaningless. Its usually used by stores to mean the highest quality stuff we got, but sushi grade is a completely unregulated term, meaning fish sellers are free to slap it on whatever they wish without consequence. In fact, the only regulation enforced by the FDA is that fish that are prone to containing parasites (such as salmon) be frozen before consuming raw.
