Saffron root (Risheh) or saffron cream is actually the end part of saffron stigma, which is called by this name, so the main root of saffron is under the soil.

The saffron flower has six purple petals and three yellow stamens attached to the stem. By separating the petals, we can see the part of the stigma, which consists of three red branches and is connected to the end of the white stigma. This yellowish white part is called cream or saffron root.

Like the stigma, saffron root contains mineral salts and compounds such as calcium, iron, manganese and various vitamins such as C, B1, B2, B6. Of course, it is natural that these materials and their properties are less than the stigma (redness of saffron). The saffron root has less crocin compared to the stigma, and as a result, its coloring power is much lower.
