The necessary to wear polyethylene gloves when handling food 

I find the chefs and cooks they all have one thing in common: they hate wearing gloves.

I think that  many places require you to wear gloves all the time without changing. Two minutes into a job, once you've touched another item your gloves are cross contaminated. If it is at that point, it makes no difference if you have gloves on or not. You're supposed to change them to prevent bacterial contamination and general cross-contamination.

I think those people  derive both tactile information and enjoyment from handling food hate wear gloves. Beacuse it's much harder to sense the texture and firmness of foods while wearing gloves. This suitation you must wear gloves while handing hot chile peppers.

Unfortunately, unlike in cooking,they are not worried about contaminating their hands with bacteria from raw food, they are worried about contaminating their sample with DNA, DNases, and proteases from their skin, so they have to wear gloves all the time.

In this suitation, you've been told not to wear gloves by a flame. Apparently in the *0 years that your lab has been in business, the worst burns are from the few horrifying occasions where latex melted onto the skin of a lab worker. If you are working on the grill you don't need to use gloves because I imagine them melting to your hands.


Years ago I hated wearing gloves, now I rather not put my hands on food that others are going to consume. Actually the thought of touching raw food now gives me the creeps, nothing worse than having raw meat and poultry on my hands, or worse hot cooked food. 

For those that complain about sweat, change your gloves more often. Start feeling sweaty, change your gloves. I actually think that the gloves are to protect both you and the food. Touch food with bare hands and you spread bacteria from you to food and from food to you. You're at risk from touching raw food just as much as the food is.
