Coconut Sugar is a natural sweetener that is derived from the sap of coconut palm trees. It has a unique flavor that is often described as caramel-like, which can add a rich depth of flavor to baked goods, drinks, and other recipes. Coconut sugar is also considered to be a healthier alternative to traditional sugar. According to Nutrition Research Institute, coconut sugar has a lower glycemic index (*5) than white sugar (*0 to *5). To make coconut sugar, the sap from the coconut palm trees is collected and heated until the water evaporates, leaving behind a thick syrup. This syrup is then cooled and crystallized into granules that resemble brown sugar.
 
The main difference between organic and natural coconut sugar lies in their production methods and certifications. Organic Coconut Sugar is produced using coconuts that are grown without the use of synthetic pesticides, fertilizers, or other chemicals. The production process also avoids the use of artificial additives, preservatives, or processing aids. To be certified organic, the coconut sugar must meet strict standards set by various organic certification bodies, such as USDA Organic or EU Organic. On the other hand, Natural Coconut Sugar is produced using the same basic process as organic coconut sugar, but it may not necessarily be certified as organic.
