A very limited and exclusive olive oil production.
We have teamed up with one of the few producers of Extra Virgin
Olive oil from millenary olive trees: Moli de la Creu, from the
town of La Galera. This "mol"(Catalan word for "mill") has been in
production since ***4 with olives from the Arion estate in the
nearby municipality of Ulldecona.
There are more than 4,**0 olive trees in this area that are more
than 1,**0 years old, making it one of the most significant
landscape of monumental trees worldwide. A truly natural
Heritage.
The result is an oil with a fully complex aroma; bitter, spicy and
sweet flavours are balanced in an harmonious way, with a great
wealth of nose and palate tones ( reminiscent of cut grass, almond,
nuts as secondary aromas ).
Recommended for haute cuisine due to its delicate nuances. It
maintains and respects ingredients with low aromatic
intensity.
