Egusi belongs to the family of water melons. They grow in gourds which are mainly cultivated for their seeds as the flesh is neither sweet nor edible. Egusi seeds are small and flat. One end of the seed is rounded while the other is tapered.
After harvest, the gourds are left to ferment; the fermented flesh is then washed off the seeds. The seeds are then dried and the light brown husks removed by hand or mechanically. When ready to be used in food recipes, the white/cream seeds are ground into powder and used as soup thickener.
Egusi seeds are in a class of their own and should never be mistaken for pumpkin seeds.Egusi Seeds are available all year round. This is because after it is harvested, it is dried and in this state, it can be stored for a very long time.
They are cultivated during the beginning of the rainy season, in the months of April through June and harvested at the onset of the dry season, in the months of October through December.Melon seeds refer to the oil rich, high protein, seeds of some of the edible gourd/pumpkin plants. These are dried and shelled to reveal flat, oval shaped, white seeds which are used to make one of Nigerians' most popular dishes. Virtually every tribe in Nigeria has a dish made with this very versatile food ingredient.1. Anti-inflammatory properties

A study reveals that the methanol extract of egusi significantly inhibited serotonin, carrageenan and prostaglandin which helps fight inflammation.

Egusi is a good herbal cure for cancer and is best for curing breast cancer.
 
The results of a study by Grossman et al., (***7) showed that cucurbitacin glycosides possess pleiotropic effects on cells thus leading to both apoptosis and cell cycle arrest. Thus cucurbitacin glycosides exhibit therapeutic effects against breast cancer cells.
 
3. Contains anti-arthritic properties
Kachhawah et al., (***6) investigated the effect of hydroalcoholic extract of melon fruits against anti-arthritic activity. The study aimed to develop a standardisation protocol for the anti-arthritic effects of the extract that contains cucurbitacin glycoside and quercetin
