The general interest in healthy nutrition has coincided here with a new culinary sensibility and it is all to the credit of our small pasta maker that has responded to this desire for excellence. Aside from our commitment to quality and respect for the products, what is most striking about our pasta and pasta producer is the determination to revive and perpetuate an Italian tradition that, in our views, has been substantially undermined by the basic logic of mass production and demand for the reduction of costs. The key to success in our high quality pasta are the experienced handmade touches to the classic succession of processes, from mixing the best durum wheat semolina with water, followed by blending, kneading, shaping and cooling. This “Fiore & Troisi” pasta also and perhaps most importantly stands out because it is dried at low temperatures (less than *5 degrees Celsius, or **0 degrees Fahrenheit), which naturally lengthens the duration of this essential operation. This is a slow and gentle method that is particularly well suited to preserving the taste and aroma of our pasta.
