You can utilize these retarder proofers to eliminate the hassle of moving products from a refrigerator to a proofing cabinet! Hold your products in refrigeration mode as needed, then easily switch to proofing mode to begin the baking process. 

Easily alternate between refrigeration and proofing modes in the same unit with this one section retarder proofer! At *2.7
" high, this extra-large unit will easily handle a roll-in rack full of bakery products. Its refrigeration mode reaches temperatures as low as 2C degrees via the integrated automatic gravitational cooling system, which is powered by a **0w compressor that uses type R***4a refrigerant. When it's time for the proofing process, automatically switch the unit to proofing mode without needing to remove the rack! The proofing mode's temperature range is *2C to *3C degrees , with relative humidity up to *5% to allow for precise control over your products' rising process. The one section cavity is sealed with 2" thick polyurethane insulation for optimal energy usage. Rack not included.
