Grown in the mountainous Tana Toraja region of South Sulawesi Indonesia, Toraja area coffee is recognized as a masterpiece throughout the world for its relatively low yet vibrant acidity. It is sometimes thought of as being comparatively more acidic, with less body than Sumatran coffee beans, but more earthy than Java coffee beans. In comparison to other coffees that leave a bitter aftertaste, Torajas bitterness vanishes in seconds. You might find a bit of a rustic sweetness in the cup profile, with a hint of fruity and pungent spicy quality at the same time.
