Under tall shade canopies at over ***0 ft. in the Matagalpa Mountains of Nicaragua, the Zeledon Family grows their **0% pure Arabica Caturra Specialty High Grown (SHG) Coffee. Their farm is located in some of the highest mountains in Matagalpa, north of the White Cliffs of Penas Blancas, near La Dalia. This is known as the GOLD ZONE for growing coffee.

The superior quality of The Zeledons Family Gold Coffee is their Old World attention to quality control from growing, picking, drying and consistency.

Quality control starts with coffee trees that have been meticulously cared for generations. The process starts by hand picking only the highest quality and largest beans from the beginning. The beans are all dry processed on large patios, naturally by the sun. The beans are turned every few hours to ensure plenty of air circulation leading to even drying and prevention of any mold or bacterial growth. After drying, the final membrane is removed, revealing the GOLD COFFEE bean. The dried beans are then sized by machine, to ensure that consistency in maintained in each **0 lb. bag. After the bags are loaded on pallets and put into protected storage, each bag is then probed top, middle and bottom once last time before they are placed in shipping containers. All shipments arrive at the shipping port of your choice, fully bonded, released by US Customs and the FDA. The shipment can be turned over to the client at the docks or delivery to your facility with a secure chain of custody can also be arranged.
e control the quality and processing of our coffee from TREE to CUP.  We own the farms, our farms send their coffee directly to the Benefiscio, then we bag all coffee and load containers and deliver the containers to the port ourselves. We test all bags, high, middle and low for consistency and quality. Our forces in the U.S. receive sealed containers, with delivery directly to our clients or to our U.S. storage facilities, providing a secure chain of custody to your door. Our coffee is **0% Arabica, the majority is the Caturra variety, the rest is composed of Catimor. The Catimor variety is a cross between Timor and Caturra, which is resistant to rust blight. Rust Blight has led to a major drop in production this year of Caturra Arabica in El Salvador, Guatemala, Brazil and Mexico.

Our Nicaragua SHG EP is a coffee that comes from the mountainous northwest region of Nicaragua. It is a Strictly High Grown coffee, meaning that the coffee was grown at high altitudes, which allows the bean to develop slower, resulting in a denser high quality bean. In addition, EP stands for European Preparation a further sorting of the green coffee before it is exported, so only the finest green beans are bagged and exported.

SHG is Specialty High Grown Coffee, grown under tall shade trees at an altitude of ***0 to ***0 meters. Growing in the shade and at the cooler temperatures of the high altitude, allows the bean to reach maturity slowly, producing a much denser bean. Also, this longer growing period increases the acidity in the bean, leading to a much richer flavor.

EP means that the coffee is processed using the European Process. Using this method, the coffee beans are screened and selected by hand. Also, defective beans are removed by hand. EP ensures that the only the highest quality beans are selected, but even more important, this quality can be provided on a consistent basis.
